Today is #sundaymealprep! I always have the hardest time coming up with great snack ideas to meal prep. I love snacks, but sometimes I get bored eating hummus and veggies all the time, and I need snacks to help me keep my energy levels up throughout the day. I was scrolling through instagram this week and I saw someone post a recipe for lavender bliss balls and I immediately knew I had to they them! I tweaked the recipe a bit, adding my favorite further food collagen peptides, cacao, peanut butter, and a bit of almond milk.
These bliss balls are so good! they're chocolatey, floral, sweet, and the perfect snack to eat after a work out or if you need a mid day pick me up. They're also super easy to make and are a great addition to your meal prep line up.
Recipe:
1/2 cup roasted, unsalted almonds
1/2 cups peanut butter
15 pitted dates
1/2 cup unsweetened cacao/cocoa powder
1/3 cup hemp hearts
1/2 teaspoon Himalayan or sea salt
1 teaspoon pure vanilla extract
2 scoops collagen peptides
1 Tbsp dried lavender
1-2 Tbsp almond milk
INSTRUCTIONS
Place all ingredients in a high speed blender or a food processor and pulse until everything in combined and smooth. The nuts should be fully ground and no chunks of dates should remain.
Squeeze the mixture between your fingers. If mixture is too dry, add a tablespoon of water or almond milk and pulse again until it sticks together. If its too wet, add more cacao powder.
Roll mixture into balls, then roll balls into more cacao powder.
Garnish with a bit more dried lavender (optional).
Store in an air tight container, enjoy within 1 week.
