Sesame Ginger Salmon

So lately I have been following the Arbonne 30 days to healthy living challenge. The purpose of this challenge is to provide your body with nourishing foods while avoiding foods that cause inflammation. Chronic inflammation is the root cause of most diseases. During this challenge, I'm focusing on healing my gut by using probiotics and through eliminating foods that have an acidic effect on the body.


Foods I'm Avoiding For the Next 30 Days:

  • Dairy

  • Gluten

  • Soy

  • Peanuts/ peanut butter

  • Sugar

  • Artificial sweeteners

  • Coffee

  • Alcohol

  • Pork

  • White Potatoes

  • Corn

  • Nitrates

  • MSG


Think this is hard? I thought so too. But after re-evaluating what I already eat, I realized I only had to swap out a few things to make this work. Besides cutting out wine and coffee for 30 days, this isn't hard at all!


Now, for the reason you're here.


Ginger Sesame Salmon



This recipe is 30 day approved, and delicious! Its something I eat on the regular, I just had to swap out the brown sugar and honey for a little agave, although you really don't need it at all!


INGREDIENTS:

  • 1/4 cup olive oil

  • 2 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • 2 tablespoons sesame oil

  • 1 tablespoons agave

  • 2 cloves garlic, pressed

  • 1 tablespoon grated fresh ginger

  • 1 tablespoon sesame seeds

  • 2 (5-ounce) salmon filets

FOR THE GINGER GLAZE

  • 1 tablespoons agave

  • 1 teaspoon tamari

  • 1 teaspoon sesame oil

  • 1/2 teaspoon Sriracha, or more, to taste

  • 1/2 teaspoon grated fresh ginger

  • 1/2 teaspoon sesame seeds

DIRECTIONS:

  1. To make the glaze, whisk together agave, soy sauce, sesame oil, Sriracha, ginger and sesame seeds in a small bowl; set aside.

  2. In a medium bowl, whisk together olive oil, soy sauce, rice vinegar, sesame oil, agave, garlic, ginger, and sesame seeds.

  3. In a large bowl, combine ginger marinade and salmon filets; marinate for at least 30 minutes to overnight, turning the salmon occasionally.

  4. Preheat oven to 400 degrees F. Lightly coat a 9×13 baking dish with nonstick spray.

  5. Place salmon filets along with the marinade onto prepared baking dish and bake until the fish flakes easily with a fork, about 20 minutes.

  6. Serve salmon immediately with ginger glaze.
